Full Description: Down the ages, the barrels of wine have been transported by boat, even travelling on the bridge of ships, exposed to the sun and spray. It was through this happy coincidence that the beneficial effect of transportation on wine was discovered. After the combined action of time and the elements, it was noticed that its flavour became fuller, its colour more amber... During the last century, Joseph Noilly decided to recreate this natural process in order to develop an original production method. This was how, in 1813, he developed the first formula for dry French vermouth. |

L'Oulibo Olive Oil Co-Op
Town: Bize Minervois
Postal Code: 11120
Department: Aude
Full Description: L'Oulibo is a cooperative that produces some of the best olives and olive oils in France. Historically, the oils of the region were made primarily from blends of olives, but today the co-operative makes some outstanding single variety oils. The two most prominent varieties in the area are the tiny picholine and the larger lucque with its pointy ends and irregular shape. Lucque olives fare are significantly longer than they are wide and curved like a crescent of the moon, strongly curved and pointed at its end, of color dark green. Cultivated only in the West of Languedoc-Roussillon. It is gathered green from September in mid-October. It is an excellent green table olive, with fine and consistent flesh. They are collected black, from November to January, and they give a fine, soft and fruity oil. The olives are picked by hand and brought to the mill as soon as possible.

The
Limoux fête is generally called a Carnaval in French, but
its real name is Fécos, the local name for its
characteristic dances. It starts with a parade of the
organising committee dressed up in comic masks, white baggy
shirts and trousers, wearing red scarves and clogs, and
carrying whips. These Meuniers (Millars) receive His
Majesty, the King of the Carnival, a stuffed dummy, who
will preside in a theoretical sort of way over the
proceedings over the coming months. Each weekend there will
be more parades in the main square, stopping at cafés to
entertain and annoy the customers.
Every Saturday and Sunday (and on Shrove Tuesday - Mardi
Gras) a bande will make a number of outings in and around
the town's main square. Each bande consists of a group of
masked pierros and their accompanying musicians who follow
the pierrots from one café to another in the square,
playing as they walk along, through a tunnel of spectators
lining the ancient arcades.
Pierrots wear a sort of uniform, the forerunner of our
modern clown outfit. Each bande has its own distinctive
colours, often based on the traditional Limoux version:
black with brilliant shiny bands. Pierrots wear a curious
expressionless white mask. They each carry a long,
flexible, decorated wand called a carabéna, and a large bag
of confetti.
